Saltine Toffee Bark

My friend Cindy gave me this recipe, she kept telling me that I had to try it. Well I did, and everyone loved it. I even took it to work and they asked for more. This was a big hit.

Saltine Toffee Bark

40 Saltine Crackers
1 cup cubed butter
1/2 cup sugar
1/2 brown sugar
1 1/2 cups semi sweet chocolate chips,
 1/2 cup milk chocolate chips
1 tsp vanilla
1 bag (8 oz) Heath Milk Chocolate English Toffee Bits

Line a 15" x 10" x 1" baking pan with a silicone liner (Using a silicone liner will make it so much easier when you are removing the toffee bark from the pan. If you don't have one you can use foil sprayed with Pam). Arrange crackers, butting them up against each other.

In a large saucepan over medium heat melt butter. Stir in sugars. Bring to a boil, stir continuously for 1 - 2 minutes or until dissolved. Remove from heat and add vanilla. Stir.

Pour over crackers.

Make sure crackers are almost all covered. The mixture will continue to spread to the edges of the crackers.

Bake at 350 degrees for 8 - 10 minutes or until bubbly.

Immediately sprinkle chocolate chips over the crackers. Allow chips to soften for a few minutes, then spread over the top of the butter and sugar mixture.

Sprinkle with toffee bits and allow to cool.

Cover and refrigerate for 1 hour or until set.  Break into pieces and store in airtight container. I layer the pieces with wax paper.
*Optional: sprinkle 1/2 cup pecan pieces over the chocolate before sprinkling the Heath bits.
ENJOY!
